The latter is a popular street food with origins in the southern regions of Italy, such as in Campania, Puglia, Calabria, Sicily.</p> <p>Secondly, the shape: stromboli uses a rectangular dough that is rolled then sealed, whereas calzone is a round dough that is folded in half and closed for frying or baking.</p> <p>The third difference is often said to be in the filling, although it is an ambiguous argument – classic fillings for stromboli and calzone include ham, mozzarella and tomatoes, and both in Italy and in America, many variations exist.</p> <p>Some also go further with a fourth point, with the sauce: that calzone is made with the sauce on the side, whereas stromboli has sauce in the filling. Preheat oven to 200°C.</p> <p>2. Prepare the sauce: in a medium bowl, combine the tomatoes, oregano and a pinch of salt. Set aside.</p> <p>3. Lightly flour a large sheet pan. Roll and stretch the dough into a rough rectangle in the sheet pan, making it as even as possible.</p> <p>4. Spread the tomato sauce over the dough, leaving a clear strip of 3 cm around the edges.</p> <p>5. Cover with the salami slices, followed by the anchovies, olives, mozzarella. Scatter over some fresh basil leaves.</p> <p>6. With the long side towards you, roll the stromboli carefully, then pinch the ends of the long roll with your fingers to seal. You may fold the stromboli slightly to form a U shape if it is too large.</p> <p>7. Cut several slits across the stromboli to allow for ventilation while it bakes. Brush over with egg wash.</p> <p>8. Bake 20-25 minutes until golden brown on top. Cut into several slices with a serrated knife. As such, <strong>recipes for the Sicilian pizza vary widely amongst bakeries and families</strong>, but some key features do not change – the bread is leavened to be soft and light using just a small amount of oil, the cheese is sprinkled on before the sauce (unlike the typical pizza where the cheese goes on top), anchovies and oregano are a must. Where possible, try to use the <strong>local variety of caciocavallo cheese</strong> from Palermo.</p> <p>For those short of time, it is good to know the dough can be prepared and left to rise in the fridge overnight. To <strong>make the dough</strong>: in a stand mixer with the dough hook attachment at medium speed, combine flour, yeast and gradually add just enough water to make a very soft, smooth dough. This may take around 10 minutes.</p> <p>2. Gradually drizzle in 2 tablespoons of oil and continue working the dough until the oil is well combined. Add in the salt and combine. </p> <p>3. Place the dough on a lightly floured surface and knead lightly for a few minutes. Form a ball, place in a bowl, <strong>cover with plastic and set aside in a warm place</strong> for 2-3 hours until it has doubled in volume.</p> <p>4. Whilst the dough is resting, <strong>prepare the topping</strong>: heat 2 tablespoons of oil in a large pan and sauté the onions over medium heat until soft and lightly golden. Pour 50 ml of water into the pan along with the tomatoes. Season with salt and pepper, simmer for 30 minutes, stirring occasionally. Remove from heat, set aside to cool.</p> <p>5. Lightly toast the breadcrumbs with 2 tablespoons of oil.</p> <p>6. Prepare the dough: dump the dough in a well oiled 40 x 30 cm rimmed baking sheet. Place the dough in the tin and using oiled hands, <strong>push and stretch the dough </strong>into the corners of the pan by pressing out from the centre, lifting each corner and stretching it to fill the tin with dough. Set aside for 30 minutes.</p> <p>7. Preheat the oven to 200°C. Sprinkle the dough with grated pecorino cheese, diced caciocavallo cheese and distribute the anchovies evenly on top. <strong>Spoon sauce on top</strong> of the cheese and spread with the back of a spoon. In a large bowl, whisk together the flour, lard or shortening, and baking soda.</p> <p>2. Start adding the water a few tablespoons at a time, working the dough with your free hand. Continue working the dough until all the flour has come together, and the liquid appears evenly distributed. Form a ball, cover in plastic and let it rest for 30 minutes at room temperature.</p> <p>3. After it has rested, remove the plastic and divide the dough into 6 portions. Roll each piece between your hands to form 6 even balls. Place them all in a plastic bag and let them rest for a further 30 minutes.</p> <p>4. Whilst the dough is resting, cook the chicken: season the chicken and add to a hot grill. Cook for a few minutes on both sides until cooked through. Set aside the chicken until it is cool enough to handle, then cut into bite size pieces.</p> <p>5. After the second rest, lightly flour a cutting board or work surface and start rolling out the dough with a rolling pin. Each dough ball should roll out to a 22cm round, about 2-3mm thick. Repeat for all 6 pieces.</p> <p>6. Now it is time to cook the piadina: heat a non-stick pan on a medium high heat, add the flattened piadina dough and cook for about 2 minutes on one side.</p> <p>7. Flip over and using just half of the surface of the piadina, spread over some pesto, followed by the mozzarella pieces, the chicken, and layer over the spinach. Fold over the piadina to close it into a half moon shape, press down lightly for a few seconds and remove from pan. Heat 2 tablespoons of oil on a pan and cook the mushrooms, until the juices have evaporated. Set aside to cool.</p> <p>2. Combine the ricotta, marjoram, Parmigiano, Provola cheese and a pinch of fresh black pepper in a bowl. Add the mushrooms and mix.</p> <p>3. On a well floured surface, divide the pasta into two sheets. Place the filling, in amounts about the size of a walnut, on one pasta sheet, leaving 3-4 cm of space in between each mound of filling.</p> <p>4. Wet the borders of each ravioli slightly using your fingers then cover with the other sheet of pasta. Seal the gaps between each ravioli by pressing down with your fingers before cutting through.</p> <p>5. If frying: Heat the frying oil in a deep pan and add the fresh ravioli, fry until golden on both sides. Work in batches and drain on paper towels.</p> <p><strong>OVEN TOASTED RAVIOLI</strong></p> <p>Follow the instructions for Pan Fried Ravioli for step 1 through to 4.</p> <p>6. Heat oven to 200°C. Line a large baking pan with foil and place a wire rack over the foil. Beat egg in a small bowl. Mix bread crumbs and cheese.</p> <p>7. Dip each ravioli in the egg then the breadcrumb mixture, pressing the crumbs lightly to adhere. The dough will be rather sticky and wet at first but, as you continue to work at it patiently, it will become smooth and even. <strong>Bear in mind</strong>, however, that focaccia dough is much softer than that of pizza.</p> <p><strong>Grease</strong> your hands with oil and spread out the dough in a lined and greased baking tin. Let the focaccia <strong>rise</strong> for about <strong>1 hour </strong>in a warm dry place (a switched-off oven will do fine). Then preheat the oven to <strong>250°C.</strong> Grease your hands once more and, using your finger tips, make little <strong>holes</strong> (without ever going right through the dough) all over the focaccia surface. Season with coarse salt and sprigs of rosemary, pop in the oven for <strong>10 minutes </strong>and then brush the surface of the focaccia with a previously prepared <strong>emulsion of water and extra virgin olive oil</strong>.
