Here’s an easy guide to dehydrate lemons, oranges – any citrus fruit really – in your home oven.

1. Pick your fruit: blemishes and blandness have nowhere to hide when fruit is dried, so go for the tastiest, prettiest oranges, grapefruit, lemons, limes, tangerines (or whatever citrus available to you) that you can find.

2. Slice evenly: between 3-5mm work best. A knife is fine, a mandolin, better. Arrange the slices on a parchment paper lined baking sheet.

3. Preheat oven to 100°C. Baking time will vary depending on the citrus, ranging from 2 hours for small wheels of kumquats and up to 8 hours for large grapefruit wheels. Make sure to rotate the baking sheets every 2-3 hours.

4. The result: the citrus wheels should be dry but slightly pliable to the touch, and the flesh slightly tacky but not moist. Conserve in an airtight container.
